2024-12-23 (M) EWC_Noodle Mode changing

I designated the rotary knob as my mode selector early on because it was an intuitive way to change quickly. I had grand dreams of the modes, but I recognized them as scope creep, so I have toned down my ambitions. The first mode was partially written and changed notes based on a musical scale. The second mode will not constrain the note changes to a scale that can play any note within an octave, but it will require holding multiple buttons on the neck. The third and fourth have not been decided. The fifth mode will be PANIC, where the controller continuously sends MIDI signals turning off all notes.
